This is now starting to get more of a pastry taste but is still more dough than pastry

This has now developed an oily mouthfeel. No other change

This now tastes like a deep-fried short crust pastry dough with an oily mouthfeel with some citrus and nutmeg like notes
Suggested Usage
I’d use this 0.5%-1% as an accent, 1%-2% as a background flavour, 2%-3% as the main flavour
I’d use with Bakery, Cream, Custard, Fruits, Chocolate, Nuts and spices
Summary
This is a deep-fried short crust pastry dough with some lemon zest and nutmeg hints in the background with an oily mouthfeel, this would make a good addition to a tart or pie crust mix, as an accent or as the main crust.
